When i actually shell out for a pro piano vst I'll be looking at synthogy ivory and alicia's keys. I even found logic's pianos to be ok, now I use the NI ones I got with complete. Great sounds are available out there, maintenance is zero, and you can edit notes and verbs etc until your heart is content. For me, no question the above advice is right - unless money and time are no object, a quality midi keyboard, fullsize and weighted, plugged into a half decent piano synth, will make your pianists happy (as long as you're good at mixing it.)
